The way to do this depends on whether or not you wish to view a single student's entry, or reports for your entire class, as well as how detailed your reports need to be. 

Basic reports:

These reports will allow you to gather aggregate data about your class. In the settings block within your course, choose "Joule Reports". Inside the reports, click the arrow next to Dashboard and select either "Activity Views" or "Recent Activity". Recent Activity will allow you to set a number of filters, most usefully student name or group, and will display timestamps of when course items have been accessed by the student, but does not total how often an item has been viewed. Activity Views totals the number of times activities have been viewed, but without timestamping. You can also click the Graph button to generate a line graph.

Advanced Reports:

Go to your course participants and select a student. Under the Navigation block, you will see the student's name under yours. Click the arrow next to "Activity Reports", and select either the Outline Report or Complete Report. Outline report displays a summary of a student's activity, listing when and how many times a particular student has viewed each resource. The Complete report displays much of the same content, but also shows the student's forum posts and assignments submitted.
